Goat Cheese & Pecan Sandwich

Just a quick hello - it rained all day yesterday and I stayed cozy warm with cup after cup of tea. Days like that are rare and I love every minute of them. I thought you might like to know about this sandwich I made. I combined herb goat cheese, toasted pecan pieces and cream cheese to make a spread on soft bread, and then topped it with thin slices of cucumber and microgreens. It was the best! A great late winter/ early spring delight :)
